Notes - Overnight cold maceration, and uses only botrytis grapes. The nose has a touch of oily, waxy fatness and honey, even a touch of toast, but the thrust is beautifully pure pear and apple fruit. The palate is another shimmering beauty, with the sweet, ripe, essence of very ripe pear, a touch of lemon zest, and a very, very fine acid structure that just runs as a beautiful edge to the sweetness.
