Notes - The mission of Bristol-based The Classic Rum Collection is to seek out rare and exceptional rums from individual estates in the Caribbean. They are released in very limited quantities after many years of careful maturation in damp, dark cellars on the British mainland. Each has been bottled straight from the cask at its optimum strength, without chilling, and with only light filtration, to preserve intact the subtleties of aroma and taste. Sugar cane has been grown for many years in Nicaragua. In 1890 a company was established to develop a plantation on the Pacific Coast at Chichigalpa, an area ideal for growing cane. In 1937 the Compania Licorera de Nicaragua SA was formed dedicated to production of fine rum. From column stills a light, delicate and fruity rum is produced, much of which is drunk young or mixed with cocktails. This rum has enjoyed extended maturation in American Oak casks and this combines additional complexity with its natural style. It is pale gold in colour, has a soft tropical fruity nose which combines with sweet round favours. It makes it an ideal aperitif to enjoy as a long drink.
