In 2007 Dave Perkins decided to build the world’s first ski-in distillery at his saloon in Park City, Utah. High West Distillery & Saloon is Utah's first legal distillery since 1870 and the world's only "Ski-in Gastro-distillery." Located at exactly 7000 feet in Old Town Park City, the home is listed on the National Register of Historic. The name rendezvous comes from the annual summer gathering of mountaineers to exchange pelts for supplies. Alcohol was not one of the supplies at the first rendezvous. But this oversight was corrected with a generous supply of whisky at the second rendezvous. Whilst waiting for his own spirit to mature he has blended two exotic straight rye whiskies - Rendezvous Rye is a marriage of two straight rye whiskies: a straight 6-year-old with a mashbill containing 95% rye and 5% barley malt; a straight 16-year-old with a mashbill containing 80% rye, 10% corn, 10% barley malt. High West does not chill filter its whiskies, they prefer to retain the natural oils that contribute flavour, texture, and a lingering finish that are sought after in a sipping whiskey. Bottled at 92 proof, the minimum proof where chill haze is less likely to form. Great neat, with a little water, or on the rocks. The high rye mashbill also makes Rendezvous Rye perfect in one of the classic cocktails made with rye, like a Manhattan, an Old Fashioned, or a Sazarac. A taste of authentic rye whiskey. "It was very clever to marry the vibrancy of a younger whiskey with the depth of a mature whiskey. Thanks to the high rye content, this whiskey is very spicy, with cinnamon, crisp mint, and fennel. Underlying sweet notes of caramel, molasses, vanilla, macaroon, cocoa, and candied fruit provide a calming effect and enhance the whiskey's complexity. But in the end, the rye is the victor, emerging with a vengeance and giving the whisky a bold, warming, spice finish." 95 Points, Malt Advocate.
