Notes - The Taylor family were wine merchants in Sydney before establishing the now-famous winery in the Clare Valley, South Australia. In 1969, Bill Taylor Snr., along with his sons John and Bill, purchased a holding of 178 hectares by the Wakefield River in Auburn. The 2005 Chardonnay is light yellow with a slight green hue. It has a fresh varietal bouquet with aromas of melon, white peach and lime. Savoury characters of cashews and baked biscuit enhance the complexity of the aroma. This is a rich style of wine which is generous in palate weight and flavour. Varietal flavours of peach and melon are evident throughout and the mid-palate is wonderfully mouth-filling. Subtle flavours of nuts and spice such as cinnamon are evidence of maturation in good quality French oak barrels. Suggested Food Matching - Try it with smoked chicken, baby spinach and pine nut penne ( with a light cream sauce) or mushroom soup with crusty bread. Veal in white wine sauce would also suit.
