The newly released
Mas des Mas is a collection of
Paul Mas Estate single vineyard wines coming from the Languedoc Roussillon’s best terroirs. The wines made by Jean Claude Mas claim to be a perfect synergy between the New World attitude and the Old World Village appellation philosophy: pure fruit-driven wines with Old World traditional emotion. The
Mas des Mas AOP St Chinian vineyard is located in the North of the appellation and leans against the foothills of the Cevennes. The soil is made of schists and acid soils, of a sandy silty texture. This means that the soil is able to store the heat during the day to give it back during the night. The low rainfall in the area also means the vines have to look deeply into the soil for water which is scarce. The grapes for the MdM
St Chinian are a blend of 60% Syrah, 30% Carignan and 10% Grenache. These undergo de-stemming and separate vinification for each grape variety. There is then 5 day fermentation under controlled temperature followed by a 3 week maceration. After the malolactic fermentation, the wine is blended and 30% of the wine is then aged in the American oak barrels for 8 months.
Tasting Notes:
Mas des Mas AOP St Chinian has a nose of liquorice, blackberry marmalade and violet with hints of balsamic and resins. On the palate this wine is round with velvety tannins, moving towards mature black fruit flavours.
