Located in the southern part of Burgundy, at the Northern limit of the Beaujolais area, Pouilly-Fuissé is often considered as the best of the Mâconnais wines. It is produced in the small village of Fuissé. Clos des Prouges is a particular site of Pouilly-Fuissé. The soil is made of clay and chalk from the Jurassic era and the production is rather small. One part of the wine is fermented in oak barrels,on its lies. Pouilly-Fuissé Clos des Prouges is powerful, very ripe, round, full, very expressive and uncommon. It smells of honeysuckle and citron. It can be served rather cool and goes very well with seabass, cooked oysters, foie gras terrine, goat cheese.
