Notes - "Cumaro" pays homage to Mount Conero: from the name of Greek origin, to its superb quality, obtained thanks to the ideal microclimate and soil. This world renowned wine is one of Umani Ronchi's flagships. From a selection of the best grapes of the 'San Lorenzo' vineyard in Sbrozzola, Osimo. The vineyard lies at an altitude of 150/200 meters. Alcoholic fermentation on the skins for 10/12 days at 27°C, followed by malolactic fermentation at controlled temperature. The wine is then matured for 16 months in Allier and Tronçais barriques and refines in the bottle in a temperature-controlled room for 7 months at least. Ruby-red colour, with garnet reflections and an intense, full, ethereal and very persistent bouquet. The palate is harmonic, with hints of wild cherry and fruits of the forest. Try with Tandoori spiced lamb chops, lamb and red pepper kebabs, pasta with sun-dried tomatoes, olive and goats cheese.
