Wine information: Wakefield Wines are located in the heart of the Clare Valley and was founded by wine merchant Bill Taylor Senior in 1969 with the purchase of 178 hectares of vineyards near the Wakefield River in Auburn. Wakefield Wines are still known under their original name of Taylor's Wines in Australia. Bill Taylor carefully chose the site for its red brown loam over limestone soils ( this is known as "terra rossa") and cool climate of the Clare valley. The same year, 1969, the first Cabernet Sauvignon vines were planted. Today Wakefield Estate is one of the most highly esteemed cool climate producers in Australia. It is also unique in the fact that all of the grapes are sourced from 400 hectares of family-owned vineyards in the winery which makes it one of the largest single estate plantings in Australia. The Jaraman range of wines are named after the aboriginal word for seahorse. Fossilised remains of seahorses have been found on the estate which confirms that the area had in fact once been the bed of an ancient inland sea. Unlike the other Wakefield wines, the Jaraman wines are a blend of fruit from two different areas, the Cabernet Sauvignon is a blend of Clare Valley and Coonawarra Valley fruit.

Tasting Notes: Wakefield Jaraman Cabernet Sauvignon, at release, is a dark red almost opaque. The wine has extremely lifted, varietal aromas of cassis, cherry and subtle aniseed along with mint and a touch of eucalyptus. Secondary, complex aromas of dark chocolate, tobacco, cinnamon and nutmeg are also evident. Incredibly intense fruit characters of cherry, cassis, mint and subtle aniseed fill the mouth, followed by subtle secondary characters of cinnamon, spice and cedar from French oak maturation. The palate is generous in texture and flavour - beginning with sweet fruit and then ending in soft, fine-grained tannins. The finish is long and pleasingly persitant.

Food & Wine match: Try it with a rich Moroccan lamb casserole, Lamb Shanks or even a gourmet cheese platter.
