Chevalier Montrachet Les Demoiselles is situated to the south of the Côte de Beaune, at the summit of the slope where the communes of Puligny Montrachet and Chassagne Montrachet converge, but on the Puligny commune, just above Le Montrachet. Louis Jadot and Louis Latour have been equal joint owners of Les Demoiselles since the beginning of the century.Louis Jadot bought the vineyard in 1913 from two sisters and decided to name it "les demoiselles". The subsoil is extremely chalky with a lot of stones, perfectly drained and easy to overheat with south-south-eastern exposition.Chevalier Montrachet "Les Demoiselles" is produced only with Chardonnay grapes, fermented and aged 15-18 months in oak barrels before bottling. This vinification highlights the unique qualities inherent in the fruit of this great vineyard. Maison Louis Jadot produces limited quantities of this exquisite grand cru, which in many vintages equals or surpasses Le Montrachet in concentration and complexity. Its bright, golden colour and penetrating fragrance of toast and honey predict the rich, mellow fruit flavours, velvety elegance and intense finish of this wine of exceptional grace and breed. This wine best suits haute cuisine such as 'crustacés à la nage', poached fish in cream sauce, liver pâtés.
