The mission of Bristol-based The Classic Rum Collection is to seek out rare and exceptional rums from individual estates in the Caribbean. They are released in very limited quantities after many years of careful maturation in damp, dark cellars on the British mainland. Each has been bottled straight from the cask at its optimum strength, without chilling, and with only light filtration, to preserve intact the subtleties of aroma and taste. Peru is not normally seen as a rum producing nation but sugar cane is grown in the higher central regions and fine spirit produced. This example was distilled on a column still from molasses and matured in used Bourbon casks for eight years in the high cool mountain air before it was shipped to the U.K. It shows considerable colour and soft deep nose with sweet round fruit and a hint of spice. The wood is soft and the palate has a medium weight of flavour together with a soft lingering finish. Enjoy on the rocks or with your favourite mixer.
