old Sélection du Château shows a lightness and delicate balance not often seen in cognacs of this price. One of the secrets is the process of reduction used, whereby old cognac barrels are half-filled with distilled water and then left to absorb some of the cognac from the barrel. This water is then used to reduce the alcoholic strength at a rate of 3 % every three to six months. Pleasing aromas of light spice and spring flowers. Slight notes of vanilla and a delicate hint of fresh oak. On the palate the flavours are very fresh with more spice and delicate citrus flavours that give the cognac real zing.
