Wine information: Founded shortly after the repeal of Prohibition in 1933, Heaven Hill became the largest independent, family-owned producer and marketer of distilled spirits in the United States. Heaven Hill‘s success is due to a mix of good business acumen, continuity, heritage and uncompromising craftsmanship. The company is still owned by descendants of the founding Shapira brothers and five generations of the famous Beam family have overseen the distillation. Located in Bardstown, Kentucky, Heaven Hill is the world’s second largest holder of bourbon whiskey with over 675,000 charred white oak barrels ageing in 42 open-rick warehouses. Double-distillation takes place at the modern Bernheim facility where Craig and Parker Beam produce rye and wheat influenced bourbons as well as straight rye, corn and wheat whiskies, using their own family yeast strain—now in its fifth generation! Parker’s Heritage Collection is a limited annual series of rare, aged American Whiskeys that pays tribute to 6th Generation Master Distiller Parker Beam. Master Distiller and industry legend Parker Beam has been seeking out and sampling the finest barrels in his favorite locations from among Heaven Hill’s 49 rickhouses. Now, after much time spent finding the right whiskeys at the right ages and proof strengths, Heaven Hill is ready to delight legions of whiskey connoisseurs with the first release of Parker’s Heritage Collection.

Tasting Notes: Parker's Heritage Collection V 10 year old Cognac Barrel Finish is structured and well rounded. The layers of flavour peel back like an onion. First, syrupy toffee sauce is brightened with candy apple, and dates over an undercurrent of warm spices (clove, nutmeg, and a gentle hum of chili). There’s a welcomed bitterness from the barrel as well. Long, sweet, and well spiced. Rum raisin, chewy caramel, and spicy warmth remain.
