Tasting Notes - Rich toffee with hints of amber. Coffee, anise and toffee aromas are evident on the nose. This dark, viscous and hugely concentrated wine displays a
complex array of flavours suggesting coffee, soy sauce, black olives and
even vegemite undertones. All this is accompanied by complex aged
characters from oak maturation in small barrels for an average of 8 years.
The finish is long and luscious. Black Noble can be enjoyed as an
accompaniment to strongly flavoured cheeses (try with Stilton), with
coffee or rich chocolate treats or simply by itself. Winemaker’s Comments: Since 1982, parcels of Botrytised Semillon have
been set aside, fortified and then aged in small barrels. The vintages are
blended to give an average age greater than 8 years. The wine was
inspired by a wine made by Vittorio De Bortoli in the 1930’s believed by
the family to be botrytised Pedro Ximinez. The base wine for Black Noble
comes from 1972 material which was a very early attempt to make a
Sauternes style. This wine is completely unique to De Bortoli.
