In 1862, Dupré Barbancourt, a native of Charente in France, put the finishing touches to a recipe for rum that still bears his name today. Using his homeland's double distillation method usually reserved for the very finest cognacs, he distills a unique product of incomparably quality which will regularly be recognized and receive the highest international distinctions, even today. Unlike industrial rum made from the fermentation of molasses, a by-product of the production of cane sugar, Rhum Barbancourt is an agricultural rum, rum made from fermented sugar cane juice. Rhum Barbancourt is aged in Limousin oak barrels in the Domaine's chais, and it is in these oak barrels that Rhum Barbancourt expresses its unique flavor and bouquet; a subtle blending of Haiti's sun and soil. Aged 8 years, five star rum, or "Réserve Spéciale", is excellent neat. Splash it on the rocks with a zest of lemon to bring out all its subtleties. On the nose it has tones of freshly cut grass and from thereafter a series of aromas are introduced to the nose - progressing from apricot to vanilla and then brown sugar. The palate has a bittersweet introduction which leads to strong essence of vanilla touched with a hint of cigar smoke. This is followed by caramel and cocoa. Finish is a light bitter coffee which quickly turns into soft, creamy toffee yet some of the bitterness lingers for a while on the palate.
