Notes - The Opimian name took a vacation in 1999 because this is a straight cabernet sauvignon. Dark crimson red with the pure hue undiminished to the rim of the wine. On the nose sweet blackcurrant leaf, almond, rose perfume, blackcurrant fruit and spice.
The palate is soft rich and round; this is a big, soft cabernet unusual for Tasmania where normally the wines can be lighter and drier. Mouth drying tannins are present and are adequate to give the wine long ageing potential but are not dominant. There are ripe red berry flavours on the aftertaste. Overall the wine has classic cool-climate cabernet family characteristics with that element of savoury complexity, which will provide great rewards with bottle age. The perfect accompaniment to rare roast beef and mushrooms.
