Wine information:
Paul Fürst took over the estate on the sudden death of his father in 1975 whilst he was still studying at Geisenheim. At the time he inherited 6 acres, today there are 37 acres. Twenty seven of which are in the Bürgstadter Centgrafenberg, a prime south facing site of weathered sandstone over loam. All vineyard work is done by hand cutting back foliage for good air circulation and thinning fruit for low yields. The challenge Paul faces and relishes is the production of Pinot Noir. Fermentation is done on skins and the wine is aged in mostly French oak. The result is a complex wine of Burgundian style with great expression. Paul Fürst was named Winemaker of the Year by Gault Millau publications in 2003. The Furst Spatburgunder Tradition is 100% Pinot Noir. The vineyard that the grapes come from are composed of red, very strong, decomposing sandstone. Vinification takes place in big wooden casks, known as Doppelstück's in Germany. The wine is a big basket full of red fruits and black pepper, bitter almonds and spicy pepper hints. Quite Burgundian. Perfect with classic game dishes and poultry.
