French-speaking islands are best known for their agricultural rums (rhum agricole). These rums, produced exclusively from sugarcane juice, retain a greater amount of the original flavour of the sugarcane.
100 kgs of sugar cane produces 10 litres of rhum agricole. Rums from Martinique and Guadeloupe are typical of this style. Known since 1924 by the square bottle and distinctive label, Bally rhum has enjoyed a most successful history until the distillery closed in 1989. The Carbet river was at one time the source of water for the distillery. The distillation column has been moved to Distillerie Simon, where Bally Rhum is now distilled. Distillerie Simon now ferments fresh cane juice to be distilled in the old Bally distillation column, to the mutual benefit of both Bally and Simon. This is a single vintage rum from 1998. It is a golden rhum agricole distilled from fermented fresh sugar cane juice. Aged at least 3 years in used whisky and bourbon barrels.
