In 2007 Dave Perkins decided to build the world’s first ski-in distillery at his saloon in Park City, Utah. High West Distillery & Saloon is Utah's first legal distillery since 1870 and the world's only "Ski-in Gastro-distillery." Located at exactly 7000 feet in Old Town Park City, the home is listed on the National Register of Historic. The heart of Vodka 7000’ comes from High West's favorite grain, oats. According to old distilling manuals, distillers from the 1800’s considered oats to make a superior tasting libation. Today, oats are no longer used because of their high cost and difficulty to distill. However, High West have indeed created Vodka 7000, the only vodka in the word that’s made from oats. Vodka 7000’ is distilled in small batches in High West'smanually operated copper pot still. This gives more deliberate control in selecting the most flavorful "heart” of the distillate where the most delicate oaten flavours are. The result is a subtle, creamy, nutty full-bodied vodka with big mouthfeel, The palate shows citrus notes, vanilla flavours and a long finish. Best enjoyed where vodka is the primary ingredient, like neat, or on the rocks, or in a dry martini. “Entry is smooth, clean, beany, and toasty; midpalate offers plenty of flavors, including toasted bread, charcoal, toffee, and sweet grain.
