Notes - Pascal and Joelle acquired Domaine Pascal Bouchard from experienced viticulturalist Andre Tremblay (Joelle's father) in 1979. At the beginning of the 1980s Pascal planted many new vines in the best possible locations. The estate now comprises 33 hectares covering the four appellations of Chablis, The third phase of their development was completed in 1995 with the construction of a brand new, modern winery. Romain Bouchard began working with his parents in 2000, having completed his studies in commerce and gained valuable working experience with another wine distributor. Romain now covers all aspects at Pascal Bouchard. Mont de Milieu is a well-known, south facing vineyard situated on the top end of the slope, south of the Grand Cru appellations on the right bank of the river Serein. Fine yellow colour with glints of green. The nose is very aromatic and offers a concentration of fruit and mineral aromas. A fresh, flinty wine with hints of muscat and a strong, full-bodied taste. Good length. This wine has a great aging potential (four to eight years) and will match ideally with fish, shell-fish and white meat.
