Notes - Corvina Veronese 70%, Rondinella 30%. Tesauro represents the wine co-operative's top selection among Recioto wines. It is a sweetish wine after the oldest of Veronese traditions and is the result of a complex process involving the drying out of the best parts of selected bunches of grapes on racks. This drying out process is carried out under strictly controlled conditions with exactly the right level of humidity. It is this delicate and intricate procedure which determines the salient characteristics of the wine such as the degree of sweetness and its body. The grapes used in the production of Tesauro come from the vines which are best placed in terms of exposure to sunlight and which grow in terrain with a high concentration of limestone, an important factor in determining an optimum level of sugar content. The grapes are dried naturaly in lofts, for at least 4 months, with the loss of 40% of weight. Destemming and crushing of grapes takes place before a controlled fermentation between 18°-22°C with a maceration period of 12 days. Aged in wood for at least one year. Shows remarkable depth of flavour with excellent structure and balancing acidity. Figs, prunes, spices and raisins combine well with some morello cherry and chocolate characteristics. Because the sweetness is balanced by good structure, this wine is an excellent choice to accompany rich, dark chocolate puddings and black cherries.
