Wine information: The origins of Champagne Taittinger date back to the original house founded in 1734 by Jacques Fourneaux. However its links to the Taittinger family started in 1931 when it was purchased by the founder of today's company; Pierre Taittinger. Today it remains owned and managed by the Taittinger family and is headed up by Pierre Emmanuel Taittinger.  Pierre Emmanuel's son, Clovis Taittinger and daughter, Vitalie Taittinger both work in the business making it very much a family affair. The Taittinger headquarters are in Reims, situated above magnificent 4th Century Roman cellars which at one time belonged to the Benedictine monks of the abbey of St Nicaise. Its miles of tunnels and cellars are perfect for the slow but necessary ageing process involved in making this great Champagne. The hallmark of the Taittinger blend is the high percentage of Chardonnay it contains,this gives the wines ultimate elegance, delicacy and finesse. Taittinger only makes a vintage champagne when the harvest has been of such outstanding quality that it deserves to be fully vinified. The wine is then only marketed after several years of ageing in the cellars, allowing the aromas to mature slowly and the length and complexity of the wine to develop.Taittinger Brut Millésimé is composed of 50% Chardonnay and 50% Pinot Noir. The Chardonnay grapes are mostly from the grands crus of the Côte des Blancs and the Pinot Noir grapes are from the crus of the Montagne de Reims and the Vallée de la Marne. These origins combined with the exclusive use of first pressing juices are necessary elements for great aromatic finesse and a long storage time. The wine is a light golden straw colour with very fine bubbles which rise to form a fine, persistent mousse. The nose presents a slightly mineral aroma, followed by intense and delicate fruitiness. The first impression on the palate is full-bodied. The mid-palate is rich, well- rounded and supple with a wide range of fruity and cakey flavours including fresh apricot and brioche. The finish is long and complex. In conclusion, Taittinger Brut Millésimé is a great Champagne offering a rich and harmonious aromatic palate. Its dominant fruity flavour has remarkable finesse and elegance. An ideal aperitif, this wine also goes very well with white meats in sauce, such as chicken breasts is a light creamy sauce.
