Notes - The southern appellation of Calvados, Domfrontais, (which was granted its AC in 1997) has a clay and limestone soil much more suited pear trees than the northern part of Calvados, which is more suited to the shallow roots of apples trees. In Domfrontais it is mandatory that at least 30% of the cider / perry to be distilled into Calvados must come from pears. This leads to a slightly lighter coloured spirit which is more delicate, elegant and feminine in style than those of the northern ACs (Pays D’Auge). Roger Lemorton is the fifth generation of Calvados producers in the Domfrontais and it is his son, Didier, who no runs this 9 acre Domaine. Lemorton Calvados is dominated by approximately 7 pears to every 3 apples. The Lemorton's distill their cider after aging it for eleven months in oak barrels. Distillation takes place in their own alambic, a single-distillation unit that distills to about 140 proof. The clear spirit then goes into barrels which have an average age of 30 years.
