Notes - Domaine Dupont is situated in the heart of the Pays d’Auge Calvados; a region long considered to add a little extra to the finesse and delicacy of the calvados because it only permits the use of apples and insists on double pot distillation. Etienne Dupont, who took over from his father in 1980, has worked hard to improve both the old orchards and the distillation methods. The orchards now combine small standard trees as well as older taller trees, and the varieties such as Saint Martin, Doux Normandie and Noël des Champs are specially cultivated to provide the maximum aromatic qualities from their small fruits. Pommeau is a blend of Calvados and Apple juice. It is made by blending one year old Calvados with 'mout' (non fermented cider). The proportions are calculated in order to obtain a final alcohol rate of 17 % by volume and stored for blending and maturation in 400 litre oak casks. These are 4 to 5 years old casks that have mellowed but impart some influence to the Pommeau. It is then aged for about 24 months. Dupont Pommeau is a clear, mahogany colour. The nose has notes of butterscotch, plums and spices, especially vanilla. The palate is supple and mellow with further spicy notes, prunes, vanilla and more caramel / butterscotch flavours. Drink straight as an aperitif or during a meal with melon or blue cheese. It also works very well with apple desserts or with dark chocolate mousses or cakes.
