Mercurey is the biggest wine area of the Côte Chalonnaise, stretching over 635ha, and is considered to produce some of the best wines in Burgundy. Domaine Jean Maréchal has been in the same family and passed down from father to son for over 4 centuries. Domaine Jean Maréchal is totally dedicated and passionate about what they produce and are making some profound, brilliantly coloured and complex Pinot Noir which always have overtones of cherries and raspberries. Careful vineyard management ensures that yields are keep low to obtain healthy grapes with a high concentration and aromatic complexity. All grapes are harvested by hand, fermentation is temperature controlled, there a pumping over of the cap three times a day for better extraction of fruit and colour. The wines are aged in oak barrels and are bottle from 15 to 18 months from harvest. Domaine Jean Maréchal 1er Cru les Byots is an elegant, well-structured and silky wine. There are red fruits (raspberry, cherry and a hint of cassis) aromas and hints of spice on the nose. On the palate, the wine is medium-bodied and has a good mineral backbone, decent structure with soft tannins. The finish is long and elegant.
