Wine information:
Zuidam Genever is hand crafted in a traditional distillery owned and operated by the Zuidam Family. More than 50 years of experience in distilling of exclusive spirits and a constant search for perfection has led to this exquisite line of Genevers. The malted barley, rye and corn used for the Zuidam Genevers is milled by traditional windmills - this way of milling causes almost no increase in the temperature of the grain and thus helps preserve the wonderful aromas. After the milling, the mashing begins by adding hot water to the corn, rye and malted barley. The process takes about 8 hours per batch. The resulting Mash is cooled to 20° Celsius and pumped to the fermentation tank. The fermentation takes place in small batches at a very low temperature which gives these Genevers their fruity flavours. Fermentation takes about 5 days. This is much longer than is customary but is essential to allow for the delicate flavours to form. The resulting mash is distilled three times in handcrafted copper pot stills producing a clean and fruity distillate (the Korenwijn mask is distilled 4 times). Part of the distillate is then distilled again over a secret mixture of botanicals (including Juniper, Liquorice root, Aniseed and others). Zuidam Jonge Genever Stone Bottle is a special recipe by Patrick van Zuidam. The mash is made from equal parts of rye, corn and malted barley and is distilled three times after fermentation. It is then distilled again with a new blend of botanicals. In this blend feature among Juniper and liquorice various other aromatic herbs and spices. This results in this Genever with its characteristic mild flavour and gentle mouth feel. A very refined genever distilled according to ancient traditions and craftsmanship. A perfect genever to drink as an aperitif. This is a 50cl bottle of Zuidam Jonge Genever presented in a gift box with a Zuidam Genever glass.
