Notes - 10% Malvasia, 10% Sangiovese and 80% Trebbiano. Vin Santo is only made during the best years. The grapes are hung from rafters to dry from the harvest until December. The room in which the grapes will be dried is prepared, and the canes are cut and arranged. Then the ripest, healthiest grapes for Vin Santo are selected from the vineyard. When the grapes have been hung from the roof they must be constantly ventilated to allow drying. So every morning - weather permitting - the many windows of the drying room are opened, and closed at dusk. Vin Santo is sealed into "caratelli" for a long time, ranging from a minimum of six years to a maximum of ten, and only then is it bottled. The 1990 Vin Santo is golden amber in colour with an intense, persistent, spicy bouquet and a well developed, complex palate showing flavours of honey, nuts and figs. Serve with desserts and biscuits; it is an excellent aperitif when chilled and is ideal with aged cheeses.
