Wine information:
Pascal and Joelle acquired Domaine Pascal Bouchard from experienced viticulturalist Andre Tremblay (Joelle's father) in 1979. At the beginning of the 1980s Pascal planted many new vines in the best possible locations. The estate now comprises 33 hectares covering the four appellations of Chablis, The third phase of their development was completed in 1995 with the construction of a brand new, modern winery. Romain Bouchard began working with his parents in 2000, having completed his studies in commerce and gained valuable working experience with another wine distributor. Romain now covers all aspects at Pascal Bouchard. Romain acquired Domaine de la Grande Chaume, a Domaine of 3.37 hectares comprising of only two parcels of vines, in 2005. The vineyard is situated on the left bank of the River Serein on the magnficent hillside of Vau de Vey and has a South-Eastern exposition and a very chalky soil. The grapes are carefully cultivated without the use of chemicals (although it is not yet certified organic) producing healthy and ripe grapes and harvesting is by hand. The wine is then vinified and aged in a mixture of oak barrels and stainless steel on its lees for 12 months. The 1er Cru Vau de Vey is a fine and rich wine, with plenty of minerality. It is elegantly oaked and has a full-bodied texture but with a delicate mouthfeel. It will easily cellar for 7 or 8 years from vintage. Try it with tartare of salmon, grilled sea fish or white meat dishes.
