Notes - Etienne Dupont has been in charge of Le Domaine since 1980, when he took over from his father Louis and his grand father Jules. He has planted an extra ten hectares of small standard apple trees. Today, there are 27 hectares of typical varieties, that is to say 6000 apple trees, for the production of Cider, Pommeau and Calvados. Apples from the Pays d'Auge are used (30% sweet apples, mainly Rouge Duret, 30% bitter apples, Mettais, Saint Martin, Frequin and Binet Rouge and 40% apples with good acidity, mainly Rambault). The apples are mixed together, crushed and pressed and then the apple juice ferments completely. The resulting cider is double distilled and is then aged in oak barrels which are lightly toasted, this helps impart vanilla aromas and flavours to the Calvados. This is a blend of Calvados at least 17 years old. It is golden in colour, clear and bright. The nose is powerful, intense, smooth and subtle. Initially there are aromas of vanilla and oak leading to floral and citrus notes. The finish is lasting and intense with flavours of green apples, nuts, oak and vanilla. Try as an accompaniment to dark chocolate or apple cake deserts.
