Notes - An Exceptional Year. A Vintage Cognac is quite simply defined. It consists of cognacs from a single year’s growth. In the case of Hine's vintages, the cognac is taken only from the Grande Champagne region, at the heart of the finest vineyards. They are aged in their 18th century cellars in Jarnac under a two lock and key system - one belonging to Hine and the other to the Cognac authorities. For any given vintage, the annual climate and the storage conditions influence the taste and the ageing process of the cognac, making each vintage unique. This pale amber coloured Grande Champagne is quite robust. On the palate, without being overly strong, this cognac reveals perfumes of dry fruits and dry leather. A perfect balance between floral and fruit hints and a very long, lingering afertaste on the palate. In this year - January 16th 1957, The Cavern Club opens in Liverpool.
