Notes - Pascal and Joelle acquired Domaine Pascal Bouchard from experienced viticulturalist Andre Tremblay (Joelle's father) in 1979. At the beginning of the 1980s Pascal planted many new vines in the best possible locations. The estate now comprises 33 hectares covering the four appellations of Chablis, The third phase of their development was completed in 1995 with the construction of a brand new, modern winery. Romain Bouchard began working with his parents in 2000, having completed his studies in commerce and gained valuable working experience with another wine distributor. Romain now covers all aspects at Pascal Bouchard. Chablis Grande Réserve du Domaine is produced from the oldest vines of the Domaine Pascal Bouchard (between 27 and 40 years old). The roots of these old vines go deep down in the ground to draw on all the goodness that the Chablis
soil has to offer leading to great concentration and ripeness. The Chablis Grande Réserve du Domaine is a rich, well rounded wine with a good mineral character – half way between Chablis and Chablis 1er cru. It is golden yellow in colour with an elegant and subtle nose with hints of apples and peach. Lively but rich and full finish. Try it with any turkey ot chicken dishes.
