Notes - Some of the greatest Rieslings come from the Saar tributary of the Mosel. The little village of Ayl lies on the western flank of the Saar, and the wines show the classic cool, herb, apple and mineral austerity which has a beauty in itself. The south-facing Kupp site is clearly the most favourable. All Ayl vineyards are known, since 1971, by the name of its historically best site: Kupp. Located on the Saar river, the 8.5 hectares of south / southwest facing hillside vineyards are situated in the Saar and Ruwer district and are composed of slate rich in minerals. The Geschwister Simon Estate is managed by Georg Steffes and he ensures that yields are kept low to produce wines with greater complexity, depth and character. The Simon Ayler Kupp Riesling Auslese is a pale golden colour with peach, apricot and ripe fruit notes on the nose. Being an Auslese the wine is quite sweet on the palate but it is backed up with good acidity. It has a very rich mouthfeel with apricot, white flower and good minerality on the palate. Try with pastries, fruit tarts or could be served with spicier dishes such as Chinese or Thai.
