The Vallet family have been making wine for three generations. They own holdings in Gevrey-Chambertin - the entire single vineyard of Clos de la Justice - Beaune Epenottes (Premier Cru) and Charmes-Chambertin (Grand Cru). They also source the best grapes from growers in other areas, with whom they have worked closely for many years. The Burgundies they produce are complex, fine and taste of the old-fashioned, 'real' Pinot Noir that their provenance would suggest. 3 Michelin star chef Gordon Ramsay is a big fan and has sourced 5 Vallet wines for his restaurant’s wine list. Clos de la Justice remains the Domaine's flagship vineyard. Advancements in the vineyards have been limited, only manure has been used for the last half a century which has encouraged wild asparagus to grow amongst the vines. Unfortunately their appearance coincides with sulphur spraying so their existence is short lived. Harvesting is manual, with the Domaine opposed to the use of mechanical techniques. Complex and fine, the wines from Vallet Freres have a great following. Whole bunches of Pinot Noir are placed in open-top fermenters and left on their skins for a minimum of 20 days with the cap broken by traditional pigeage. The wines are kept in French oak for a minimum of two years, then bottled and labelled by hand.
