Description

Selladore En Provence Rose is a Provencal Rosé wine which is bottled as a Coteaux Varois En Provence Appellation D’Origine Protegee (AOP). The Coteaux Varois AOP surrounds the city of Bignoles and encompasses some 28 different communes. The soils here are generally clayey–limestone soils, rich in flint stones, and the vineyards benefit from a special microclimate due to their high altitude (the vineyards are located at an average of 350m above sea level).

Chase’s vineyard’s at Domaine St Jean de Villacroze, which they have owned since 2015, are now spread over 27 hectares across the prestigious appellations of the Coteaux Varois en Provence and the Côtes de Provence. In the vineyard, maximum leaf coverage is encouraged to protect the grapes during the growing season. Then, two weeks before harvest, manual leaf plucking is done around the bunches to allow light and air to reach the fruit. This helps with the final ripening of the grapes and prevents rot or mildew which can be caused by high humidity during cooler nights in late summer and early autumn. 

The grapes for Selladore En Provence Rose are hand harvested in the early hours of the morning to preserve the freshness (and maintains optimum acidity) of this Provence Rosé wine. The grape varieties are then vinified separately which allows the winemaker more control over the final blend. After the grapes are de-stemmed there is a gentle pressing followed by minimal skin contact which gives the wine its delicate pink colour. The wine undergoes a temperature controlled fermentation below 17˚C in stainless steel tanks and a portion of the blend is aged on the lees, with regular lees stirring, which enhances creaminess and texture.

Selladore En Provence Rose is a blend of Grenache, Syrah, Cinsault, and the white grape Vermentino (also known locally as Rolle) which lends some peachy character. It is presented in a very smart, elegant bottle. One item of note is the closure. The wine is sealed with a Vinolok closure. An ideal closure for wines to be drunk young. Why not re-use the bottle for making sloe or damson gin or for making salad dressing?

And why the wine called Selladore En Provence? Selladore is a play on the words “Cellar Door”. For those of you into Phonaesthetics, the compound noun cellar door has been widely cited as an example of a word or phrase that is beautiful purely in terms of its sound without inherent regard for its meaning. Something that proprietor William Chase learnt at school and never forgot!

This excellent Rosé wine is sometimes available in 1.5L magnums.

Tasting Notes

Selladore En Provence Rose is a beautiful pale shade of pink. The wine has a lively nose exuding stone fruit and citrus fruit aromas. An enveloping silky texture on the palate is balanced with refreshing acidity and bone-dry flavours of peaches and grapefruits. Long, lingering finish.

Food Pairing

This fantastic Provence rose should be served chilled, but not too cold. It is perfect as an aperitif and great with summer salads, warm goat’s cheese, chicken and grilled fish and seafood dishes.

Our top tip is to try it with with cottage pie. It works surprisingly well!
