Wine-making in Argentina has developed a great deal in recent years, the climate is warm and dry but plenty of run-off water from the Andes Mountains provides relatively easy growing conditions. Approximately three-quarters of wine produced is from the Mendoza region, but there are other areas including Tupungato, Salta and Cafayate. Argentina's most famous white grape variety is the spicy Torrontes, although Chardonnay and Sauvignon Blanc are also grown. Malbec (also known as Cot in Cahors) is the most successful red variety and there are very good examples from Etchart and Terrazzas de Los Andes. One of a superb new breed of joint ventures is the Cheval des Andes - a joint venture between Chateau Cheval Blanc and Terrazas.
