Chablis is a town located in the northernmost part of Burgundy and gives it name to a white wine made from Chardonnay grapes. The AOC laws give four different levels of quality (high to low) - Grand Cru, Premier Cru, Chablis AOC and Petit Chablis. The region is divided in two by the Serein River and is characterised by a unique soil which is a combination of clay and chalk called “Kimmeridgian”. It is this soil type that gives Chablis is unique aromas and flavours - it is often said to have a flint, or gunflint, character or "wet rocks". There are seven different Grand Crus (including Blanchot, Les Clos and Grenouilles) and many more Premier Crus. Two of the well-know Premier Crus are Vaillons and Beauroy such as those from Domaine Pascal Bouchard.
