Corbières wines are from the Midi region of Southern France and most production is given over to red wines. Corbières is one of the largest wine regions in France and production is centred around Carcassonne, Perpignan and Béziers. Approximately 50% of production is the red varietal Carignan but there is Syrah, Grenache, Mourvèdre and Cinsault grown as well. A good Corbières, such as Chateau D'Aussières from Domaines Barons de Rothschild, is big, rich, full-bodied and spicy.
