Madeira is a fortified wine made in the Madeira Islands of Portugal. Madeira is made by being subjected for a period of some months to high temperatures in special buildings called Estufas, this hastens the aging process and gives the Madeira its characteristic flavours, it is then fortified. The four main types of Madeira are - Malvasia (also known as Malmsey), Bual (Boal), Verdelho and Sercial, the latter two are drier styles. The Madeira Wine Company own two of the biggest brands - Blandy's and Cossart Gordon. Of the smaller producers, Barbeito is one of the best. Madeira is a very versatile wine and can be used as an aperitif, drier styles go well with consommé or mushroom dishes, whilst sweeter, richer styles can be used as a match for puddings, blue cheeses or as an after-dinner drink.
