Absinthe Francois Guy is a spirit made at Distillerie Guy from wormwood extracts and is distilled using the same renowned family recipe that was in use until the French ban of Absinthe in 1914. Absinthe production was finally able to recommence, after a break of many years, in 2001 when Absinthe producers won their court battle which allowed them to make Absinthe once again.
Distillerie Guy is located in located in the town of Pontarlier in the the heart of Absinthe country in eastern France near the Swiss Border in the Franche-Compté department. The company was founded by Amand Guy who started working in the Absinthe trade in 1890. Eventually Guy started his own Absinthe company and it has passed down through 4 generations and is currently under the stewardship of Francois Guy. Distillerie Guy is also world-famous for its Pontarlier Anis. The exact recipe of herbs and spices is, of course, a family secret recipe handed down from father to son. The main ingredients for Absinthe Francois Guy, however, are green aniseed, from Spain, and wormwood (the absinthe plant) grown locally in the Pontarlier area.
Francois Guy, along with other absinthe producers in Pontarlier is currently trying to obtain geographical and quality certification from the Institut national de l’origine et de la qualité (INAO), the French organization which regulate the origin and quality of French agricultural products, for Pontarlier absinthe. This is intended to be a guarantee of quality and consistent flavours linked to the Pontarlier absinthe terroir and the use of traditional methods in its cultivation and production. Each bottle of Absinthe Francois Guy comes with a metal Absinthe spoon.
