Ad Hoc Middle OF Everywhere Shiraz is made from grapes sourced from some of the best vineyards in Western Australia, primarily in Frankland River region. The company’s knowledge of these regions and relationships with various grape growers enables them to find the best vineyards for each grape variety. The Shiraz grapes are harvested by hand and sorted prior to fermentation in small lot fermenters. Extraction is moderated to ensure that the vineyard characteristics are fully expressed. The wine is aged in a combination of new and one year old oak for 6 to 8 months.
