Candido Aleatico Salice Salentino is a sweet (dolce) red Italian dessert wine from Puglia in Italy.
Vini Candido can trace their origins back to 1929 when Francesco Candido produced his first wine. Today their range of wines is perhaps the most diverse and innovative to be found in Puglia and under the stewardship of third Alessando and Giacomo, the third generation of the Candido family the company remains one of the most important of the Salento region. The grapes come from vineyards located within the Salento peninsula where the climate is mediterranean with low rainfall and ripening takes place slowly due to the striking contrast between day and night-time temperatures, resulting in a strong development of aromas, richness and concentration. The company has two bases, one in Guagnano, in the province of Lecce, and one in San Donaci, in the province Brindisi. Although they are in different provinces, they are only a few miles apart. Vinification takes palce at Guagnano, whilst the wines are blended, aged, bottled and shipped from San Donaci.
Candido Aleatico Salice Salentino is made from 100% Aleatico grapes. The grapes are gently crushed and macerated at a cool temperature. The fermentation is stopped by repeated racking of the wine to remove the yeasts, thus ensuring that the natural sweetness is retained in the wine. The wine is then aged in barrel prior to bottling. Candido Aleatico is a semi-aromatic wine with an aroma pleasantly reminiscent of Muscat. Broad, rich, penetrating and showing maturity on the nose.
