Description

Cardenal Mendoza Nebulis Brandy is a limited release Spanish Brandy from one of the most prestigious producers of Brandy de Jerez, Sanches Romate Hnos. This is a smokier, softer and richer version of their classic Cardenal Mendoza Solera Gran Reserva brandy. It was first launched in 2021.

Sanchez Romate was founded by Juan Sánchez de la Torre in 1781 and is one of the last family-owned Sherry houses. Over two hundred years later Sanchez Romate is one of the oldest bodegas in Spain and one of the remaining wineries in the Jerez Designation of Origin that remains under independent family ownership. A brandy was first produced in 1887 and it is the fabulous Cardenal Mendoza Solera Gran Reserva which has become the family’s flagship brand, although their Sherries follow closely behind! Regulated under the strict auspices of the Consejo Regulador – the Brandy de Jerez regulatory body – and the even stricter controls of the bodegas of Sanchez Romate itself, the Cardenal Mendoza brand surpasses these regulations with ease, making it one of the greatest and most sought after brandies from Jerez.

As mentioned above, Nebulis is made using the Cardenal Mendoza Solera Gran Reserva. This is Sanchez Romate’s flagship Brandy de Jerez, aged in a Solera System, a fractional ageing process. At Sanchez Romate 500 litre casks, which have previously been used for ageing Pedro Ximénez (PX) and old Oloroso Sherry wines, are used in the Solera to age the brandy. The brandy is then continuously blended though the Solera process for many years. When the brandy is drawn off the Solera it is estimated that it an average age of 15 years old.

To make Nebulis Bandy, Sanchez Romate take small, 250 litre oak barrels which are then toasted and smoked using vine clippings. These toasted barrels become infused with herbaceous and smoky aromas from the vine shoots. The Solera Gran Reserva is then  matured, or “finished”, for some months in these small 250 litre barrels.

Nebulis means “clouds” in Latin and it is so named after the clouds of smoke produced during the barrel toasting process.

Bottles non chill filtered at 40% ABV.

Tasting Notes

Appearance: Dark, brown mahogany colour.

Nose: gentle smokey notes combine with raisin-y, liquorice and rancio aromas.

Palate: Intense yet elegant and balanced with spicy, fresh tobacco, fruitcake and more enticing smokiness.

Finish: Long lingering finish.

To Serve

Serve in a large brandy balloon, as a digestif after a meal. It can also be served over ice.

This is also a great match for chocolate. Or a good , fuller bodied Cuban cigar, like the Bolivar Petit Corona.
