Doorlys 5 Year Old Rum is a Barbados rum produced at the Foursquare Distillery. It is a Single Blended Rum matured exclusively in ex-bourbon cask American white oak and offers both a natural sweetness and a lovely complexity and intensity.
The Foursquare Distillery, which is owned by the Seale family, occupies the site of a former sugar factory that dates back to 1636 and, as one of the most modern (it was opened in 1996) and efficient rum distilleries in the world. It is designed to be both highly energy efficient and environmentally friendly. Martin Doorly & Co was one of the old Bridgetown rum bottling companies (founded in the 1920s) which eventually evolved into Doorly’s Macaw Rum, the first bottled rum exported from the island. The Doorly’s Rum brand was acquired by R L Seale in 1993. R L Seale is one of Barbados’ oldest trading houses, a family-owned business whose involvement in rum-making extends from father-to-son since 1820. Current head distiller, Richard Seale, is one of the region’s most innovative distillers and blenders and has a passion for producing perfect rum with great flavour.
Doorlys 5 Year Old Rum is made from distilled fermented molasses (from a combination of pot and column stills) which are then aged for a mimimum of 5 years in oak barrels. Bottled at 40% ABV.
Like the other rums in the Doorlys Macaw Range of rums this one features a Macaw on the label, in this case the Scarlet Macaw, Ara macao.
Nose: Crisp golden syrup biscuits, and crumbly fruitcake. Gentle notes of rich bourbon vanilla, raisins, and hints of black tea and delicate leather.
Palate: Soft and sweet onto the plate, with lovely mild gingerbread cake sweet, spicy notes.
Finish: Notes of baking spices, dark, bitter chocolate, and a lasting gentle astringency, with hints of black tea.
It is great in cocktails, try in a daiquiri, or for sipping on its own over ice.
