Description

Fuji Single Grain Japanese Whiskey is produced by the Mount Fuji Distillery. The distillery is located in the city of Gotemba, Shizuoka Prefecture, at the base of the southeastern flank of Mount Fuji at 620 meters above sea level (some 12 kilometres from the peak). The house style leans towards the “pure and mellow”.

The Mount Fuji Distillery, which is also known as the Fuji Gotemba Distillery, is owned by the Kirin Brewery Company.  Established in 1972, it’s the largest whisky distillery in the world with a capacity to produce 12 million liters of whisky annually. The distillery undertakes all the processes of the whisky production from mashing and fermentation through to distillation. Unusually the distillery produces a wide variety of whiskies, including malt whiskies, grain whiskies and blended whiskies. The distillery has pot stills for malt whisky, multi-column stills for light grain whiskey, a kettle still for medium grain whiskey and double stills for heavy grain whiskey. This allows them to produce whiskies that mimic different world whisky styles, like Scotch, Irish and American whiskies. Fuji Whiskey is the flagship style.

The location in Gotemba was chosen as it is considered to have very similar to that of Scotland which is considered ideal for whisky production. The area has a high humidity which is maintained by a year-round blanket of fog, a cool highland climate with a yearly average temperature of 13°C. The air is purified by the surrounding forests at the foot of the mountain. All of this combines to form the ideal terroir around the distillery.  The water used in the whiskey production comes from an ancient aquifer 100 meters deep underground which is fed from snowmelt and water from Mount Fuji. The water is filtered and polished for 50+ years for it to reach the aquifer.

Fuji Single Grain Japanese Whiskey is a blend of three different styles of grain whisky. The three different whiskies are distilled using three different methods, each producing its own distinct flavour profile. The Bourbon-style whisky is heavier, rich, and exhibits a floral fruity character. The Canadian-style whisky, on the other hand, is medium-bodied, luscious, and has a delicate fruitiness. Lastly, the Scotch-style whisky is lighter, soft, yet undeniably captivating. The final whisky blend features the quintessential characteristics of each of the three types of grain whiskies and is delicately fruity, mellow with a multi-layered profile.

Tasting Notes

Nose: Poached pear, rustic fruit tart, Cognac and marron glacé.

Palate: Orange marmalade, raspberry, spiciness of rye, and bitter chocolate.

Finish: Mellow with a hint of exotic incense wood, moderate to long aftertaste.
