Jeffersons Ocean is a very small batch Kentucky Straight Bourbon Whiskey that has literally been aged at sea.
Jeffersons Bourbon was founded in 1997 by Trey Zoeller and his father Chet, a famed Bourbon historian. There had been a long history of spirit production in the family stretching back to 1799 when one of Trey’s ancestral grandmothers was arrested for the “production and sales of spirituous liquors.” The brand is names for Thomas Jefferson who was known for his curiosity and experimental still. Jeffersons handcrafts their Bourbon whiskies in “very small batches” (usually a marriage of 8 to 12 barrels), using traditional techniques, his bourbons appeal to novices and experts alike. The initial batch of Jeffersons Ocean Aged at Sea was created in 2012 and was inspired by lengthy river and sea trips that Bourbon used to undertake en route to market.
This bottling of Jeffersons Ocean Aged at Sea is made by ageing a 6 to 7 year old Bourbon in older Bourbon barrels for 6 months on the deck of a research vessel in the tropics. The vessel visited in 5 different continents, crossed the equator 4 times and visited 30 different ports. This process, combining the motion of the sea, the salty influence of the sea and the hot baking heat of the tropics produces a caramelised bourbon, with a slight salty tang whose maturity belies its youth.
This bottling is from Voyage #5.
