La Diablada Pisco is a Peruvian Pisco, a grape brandy, made by Macchu Pisco. La Diablada Pisco is the company’s super-premium Pisco and is made in the “Ancholado” style. In fact, it is the world’s first vintage Peruvian (PGI) “acholado” style which uniquely uses the first pressing of grapes.
La Diablada Pisco is made from a first pressing of Quebranta, Moscatel, Italia and Torontel grapes, the Quebranta grapes give the Pisco fantastic body and aroma. By using the first grape pressing and only the heart of the distillate, the equivalent of 7kgs of grapes go into each bottle of La Diablada. The 4 Eaux-de-vie are distilled once to proof, then by resting them over a 2 year period they reach 40% ABV naturally without the addition of any water.
Macchu Pisco was founded in 2006 by Melanie Asher and her sister Lizzie with the main intention if bringing quality Peruvian Pisco to the United States, Europe and elsewhere. La Diablada is named after an Andean spiritual dance enacting a fight between angels and demons and combines the spiciness of the devil and the sweetness of the angels.
Perfect in a Pisco Sour.
A brisk, slightly tannic entry leads to an off-dry full-bodied palate with ripe melon, fruit punch and dried flowers. Finishes with a gentle warmth, hinting at peppercorns and the skin of apricots.
