Description

Pascal Jolivet Attitude Sauvignon Blanc is bottled as an Indication Geographique Protegee du Val du Loire. The IGP Val du Loire was created in 2009 and replaced the old Vin de Pays du Jardin de la France appellation. The grapes can come from anywhere within the Loire wine-growing region.

Pascal Jolivet is most famous as a producer of Sancerre. The company was founded in 1987 and has developed into one of the most exciting and dynamic producers in the Loire Valley. The estate comprises some 70 hectares in Sancerre and Pouilly Fumé as well as 20 hectares in the Touraine. The grapes for the Pascal Jolivet Attitudes Sauvignon Blanc is are from the Touraine vineyards. The vineyards are located in at Chemery (limestone soils) and Anger sur Cher (Silex – a flint and sandy soil typically found in the Loire).

After harvest, the grapes are gently pressed. The juice is then fermented in stainless steel using natural yeasts, at 16°C to preserve the aromatic compounds of the grapes for 40 days. After fermentation, the wine spends a further two months maturing on its lees wine before bottling.

Winemaker is Valentina Buoso, a young, dynamic winemaker who took over from her predecessor, Jean-Luc Soty, who had worked with Pascal for 22 years, in 2013.
