Description
Peppoli Chianti Classico DOCG is made by Antinori, one of the most famous and oldest wine companies in Italy. It is a classic Tuscan red wine made principally from Sangiovese grapes.
Antinori have been producing wine in Tuscany for six centuries. This wine is made at their Peppoli estate in Chianti Classico which Antinori acquired in 1985. The Peppoli estate is located three miles to the northeast of the family’s world-famous Tignanello estate and extends over a total surface area of 123 hectares, 50 of which are planted with vines. The grapes are all harvested from the estate which has vineyards planted in a valley on mineral-rich soils, ideal for Sangiovese. The estate is also famous for its red wine vinegar and olive oil. The wine is vinified at the Antinori nel Chianti Classico cellars.
The blend is for the Peppoli Chianti Classico is 90% Sangiovese and 10% comprised of Merlot and Syrah. The grapes varieties are vinified separately, the Sangiovese in stainless steel and the Merlot and Syrah in large oak barrels. The Sangiovese portion was left in contact with the skins for one week and other varieties from 12 to 15 days. After alcoholic fermentation the wine undergoes malolactic fermentation, the wine is then blended and for nine months in a combination of 90% large Slavonian oak barrels and 10% in smaller American oak barrels or stainless steel.
