Zensa Fiano Salento IGP (Indicazione Geografica Protetta) is an organic white wine made in the Salento wine-growing region. It is made by Orion Wines, a company created to bring together interesting wines from small growers and wineries from all over Italy. The company was created by Luca Pomaro and winemaker Alessandro Michelon and Orion Wines retains complete control over the vineyards and growers they work with. The idea is to produce wines from indigenous grapes that express the typicity of the particular region where they are grown. Zensa means “without” or “to do without” in Italian, and the organic Zensa Fiano is made without pesticides and fertilisers.
The grapes for the Zensa Fiano are sourced from low-yielding, fully-organic vineyards in the Salento region of southern Puglia. The Fiano grapes are harvested in the cooler, early morning so that the grapes arrive at the winery in best condition and that freshness is maintained. The grapes are destemmed and gently pressed, the must chilled and left to rest for 18 hours. The juice is then racked into stainless steel for a cool, temperature controlled fermentation at 18c . The wine is then left on its lees for around 1 week to add complexity and creamy texture.
