Zuidam 5 Year Old Single Barrel Oude Genever is an “oude genever” that has been aged for 5 years in barrel. Genever is made from distilled malt wine and an “oude genever” must contain at least 15% malt wine and no more than 20g/L of sugar. Zuidam make their malt wine from a mash bill of equal parts corn, rye, and malted barley. The other portion can be made up from molasses spirit etc., but Zuidam Genevers are all made from 100% malt wine across their entire range. The malted barley, rye and corn used for Zuidam Genever is milled by traditional windmills – this way of milling causes almost no increase in the temperature of the grain and thus helps preserve the wonderful aromas. After the milling, the mashing begins by adding hot water to the corn, rye and malted barley. The process takes about 8 hours per batch. The resulting Mash is cooled to 20° Celsius and pumped to the fermentation tank. The fermentation takes place in small batches at a very low temperature which gives these Genevers their fruity flavours. Fermentation takes about 5 days. This is much longer than is customary but is essential to allow for the delicate flavours to form. The fermented liquor is then tripled distlled in a small pot still. Part of the pure spirit is then redistilled in the presence of three botanicals – juniper, liquorice and aniseed. The pure spirit and the botanical spirit and then blended together, brought down to 45% and then aged for 5 years in 200 litre virgin American oak casks. Zuidam 5 Year Old Single Barrel Oude Genever is bottled from single casks at a strength of 38% abv.
